Mizeria (Cucumber Salad)

This is such a simple salad, but so delicious. It can be served any time of the year, although I find it best served in the summertime. Cucumbers are fresh and abundant from the garden, as is fresh dill. Use lots and lots of fresh dill. Dried dill is no substitute. I like the cucumbers to be sliced very thin. Using red onion instead of white or yellow creates a contrast in colors, adding not only dimension, but more flavor.

Add all ingredients to a large bowl and mix to combine well. Add additional sugar, salt, and pepper to taste. Serve on lettuce leaves and sprinkle with additional fresh dill.

3 large cucumbers, peeled and sliced thin
1 c sour cream
1 tsp sugar
1 tsp black pepper
2 tbl white vinegar
2 tsp salt
1⁄2 c diced red onion
1 tbl fresh dill chopped fine
